Mac comes to The Founders Golf Club from The Concession Golf Club in Bradenton, Florida where he served as Executive Chef over the past nine years. During this period, he was in charge of the operational management responsibilities for all areas of the dining experience and service. In addition to successfully operating the A la carte dining for Membership, during his tenure, he seamlessly executed events with guest lists of up to 600.
Beginning in the mid-nineties, Mac worked as the Executive Chef and Catering Director at The Beach Bistro at Holmes Beach on Anna Maria Island. Over the decade that he worked there, the restaurant received many accolades including Zagat Guide’s “Best Food on the Gulf Coast” recognition. While at Beach Bistro, Mac joined an exclusive group of chefs including Wolfgang Puck and Emeril Lagasse who have been honored with a James Beard House Dinner. After his second dinner presentation at the James Beard House in New York City, Mac was nominated as “Best Chef in the Southeast”.
In a nod to the sport we all love, Mac was featured in Jack Nicklaus’ book entitled “A Golden 18: A showcase of Legendary Clubs Designed by Jack Nicklaus”.
